Ingredients for Deep fried fish fillet on a bed of sautéed vegetables & pea purée
- Fish Fillet
- 1 TBSpoon salt
- 1/2 TBSPoon black pepper
- 1 egg
- 1 medium carrot
- 1 medium red bell pepper
- 1 medium green bell pepper
- 1 medium spring onions
- Veg oil (enough for deep frying)
- 1/2 cup sweet corn
- For Pea Purée
- 1/4 tsp sugar
- 1/2 cup green peas
Cooking Instructions for making Deep fried fish fillet on a bed of sautéed vegetables & pea purée
Season fish on both sides with 1/4 tbsp black pepper and 1/2 tbsp salt
In a bowl, break 1 egg and whisk
Heat oil on medium heat
Dip seasoned fish in egg and deep fry
Slice and julienne carrots, onions and peppers
In another pan, heat about a tablespoon of veg oil
Add onions and keep stirring until sof
Add carrots and keep stirring
Add 1/4 tsp black pepper and 1/2 tbsp salt to taste
Add peppers and sweet corn and cook for 2mins
Boil green peas in water until tender
Remove water from peas and immediately add to cold water for 10minutes to stop cooking process and maintain green colour
Strain peas and add to a food processor, add sugar and puree
Take sauteed vegetables and place in the center of a plate
Place fried fish on vegetables
Use a spoon and dollop pea puree at the side of plate m, place spoon in the pea puree and drag to form an arc shape and garnish with more sweet corn if desired
