Ingredients for Stuffed sardines in tomatoes 🍅🐠
- 5 medium size tomatoes 🍅
- 1 tbsp Ginger-garlic paste 🧄/ chopped
- Salt to taste 🧂
- 2 small size green peppers chopped 🫑
- 3 finely chopped onions 🧅
- 5 scooped tomato pulps,,🍅
- 1 finely chopped green chillies
- 1/2 tsp black pepper powder
- 1 tsp kashmiri red chillies powder🌶️
- 1 /2 tsp coriander & cumin powder
- 1 tsp cumin seeds
- 2-3 tbsp oil+ 2 tbsp for shallow frying
- 1 cup minced sardines canned
- 2 tbsp Fresh grated coconut,🥥
- 2 tbsp finely chopped coriander leaves🌿
Cooking Instructions for making Stuffed sardines in tomatoes 🍅🐠
Wash and clean tomatoes 🍅, pat dry them on kitchen towel, cut and remove pulp from tomatoes 🍅, keep tomatoes pulp separately.
Cut all the remaining ingredients, onions 🧅, green peppers 🫑, ginger garlic, green chillies, coriander leaves 🌿.
Heat oil, add cumin seeds when start to crackle, add chopped ginger & garlic cook till golden, finely chopped onions 🧅 cook till golden, add tomato pulp🍅 and mix well.
Add black pepper powder, salt, green chillies chopped and mix well,cook for 1 min, add kashmiri red chillies powder 🌶️, coriander & cumin powder, fresh grated coconut mix well, stir cook for 3 mins.
Add minced sardines with it juice and mix well, cook until the juice is dried out. Finally add chopped green peppers 🫑 and mix, cook for 1 min, remove from flame, stuffing is ready.
Take tomatoes shells and fill in the stuffing, heat oil and arrange them in oil and fry them. Don’t cover them, cook until tomatoes 🍅 are soft and serve immediately.
Note:Due to power cut, I just over cooked the tomatoes, it’s kindly recommended that you should remove 4 mins lately or when tomatoes 🍅 are soft and serve.
