Ingredients for Cheese and Onion Potato cakes
- 2.5 KG/2.500g cooked Baking Potatoes
- 200 g Mature Cheddar Cheese
- 4 tbsp. Olive Oil
- 3 medium or large Brown Onions
- 1/4 measuring spoon of Table Salt
- 1 tsp. Ground Coarse Black Pepper
- 2 hen eggs
- 100 g Plain Flour
- 1 tbsp. Vegetable Oil, plus another One later
Cooking Instructions for making Cheese and Onion Potato cakes
Preheat the oven to Gas Mark 7.
Wash the outer skins of the Baking Potatoes in only cold clean tap water within a large mixing bowl – rinse – and then add more cold water too clean and then place all the 2.5KG Potatoes on the top shelf of the oven and bake for 1 hour and 30 minutes. Turn the oven off and allow the potatoes too sit in the oven overnight
Place 4 tablespoons of Olive Oil in a large non-stick Wok, or Frying Pan and then gently heat the Olive Oil through on the lowest hob simmer and then peel and wash in cold tap water the onions and then quarter into 4 from each One onion and then slice through the use of your Tefal Food Processor and then eventually place the thin sliced onions in the non-stick Wok. Fry gently for 10 minutes and then allow too cool with the Wok Lid on
Scoop the cold cooked potato inside the Jacket Skins into your Tefal Food Processor, but first connect the 2 pronged blade too the Tefal Stand Attachment underneath and then add the cold cooked potato – mix on full power until smooth and then add the seasoning of Salt and Pepper and then add the 200g of grated Mature Cheddar Cheese – use the Tefal too mix on full speed again
Carefully transfer too a large Mixing Bowl and then add the cold cooked fried onions – stir with a Wooden Spoon and then weigh on a pair of Scales 150g of the mix and then place Plain Flour on a Dinner Plate and then place each 150g of potato cakes onto the flour and then beat the One hen egg, or Two – and then with potato cakes floured on each side – dip into beaten egg and then coat the otherside and then back into the Plain Flour again
Shallow fry in a little bit of Vegetable Oil on the lowest hob simmer for 15 minutes with the Wok Lid on – and then turn over with a special Fryer Wooden Spoon and a Dinner Knife in the other hand and then flip the potato cakes over and then continue too fry on the lowest hob heat for a further 15 minutes with the Wok Lid on, and then it’s done
