Ingredients for Cheese Cauliflower
- A. 🔪 Bake/roast until just tender but still firm
- 1 big Cauliflower head – broken into pieces
- Salt
- Pepper
- Olive oil
- B. 🔪
- 50 butter (or use 1 – 2 tbsp olive oil)
- 4 tbsp plain flour
- 500 ml liquid (300ml thickened cream + 200ml full cream milk)
- 25 g (2 tbsp) grated parmesan cheese
- 50 g shredded cheese (we use mixture of cheddar, mozzarella)
- C Extra cheese for topping
Cooking Instructions for making Cheese Cauliflower
Prepare & measure all ingredients.
A – Cut cauliflower into small florets. Sprinkle enough salt, ground white pepper powder and olive oil. Mix well. Transfer to a tray and then roast in a preheated oven for 10mins or until just done. Remove from the heat. Keep aside.
*roasting resulting a thick creamy cheese cauliflower.
B – Melt butter or heat oil in a sauce pan. Add 4 tbsp of flour and stir for 1 minute over low heat.
Add the cream and milk mixture. Stir well to mix. Next, whisk in the cheese and keep whisking until they thicken.
Arrange the first layer of cauliflower in an ovenproof baking dish and pour over the cheese mixture. Sprinkle with extra mozzarella and parmesan. Do the same with the rest and top with extra parmesan and mozzarella.
Bake for 20-25 minutes or until golden brown. Serve warm as a side.
