Ingredients for Vegetable fried rice with teriyaki chicken
- For the marinade
- 1 whole chicken, de-skinned and cut into small sizes
- 1 table spoon ginger and garlic minced
- 3 table spoon brown sugar
- 2 table spoon black pepper
- 3 table spoon sesame oil
- 1/2 cup soy sauce (low sodium)
- 1/4 cup apple cider vinegar
- For the rice
- 5 cups, extra long grain rice
- 1 whole onion diced
- 3 table spoon spring onion
- 100 kg cooking butter
- 2 table spoon olive oil
- 1 tea spoon finely grated ginger and garlic
- 1 cup carrots, finely diced
- 1/2 cups spring onions finely chopped
- 1 table spoon salt
- 2 table spoon black pepper
- For Garnishing
- 1/4 cup spring onion finely chopped
- 1 table spoon Semi roasted sesame seeds
Cooking Instructions for making Vegetable fried rice with teriyaki chicken
To create the teriyaki sauce, you mix the soy sauce, apple cider vinegar, brown sugar, sesame oil, ginger- garlic paste, and black pepper powder together, whisk it thoroughly
Divide the marinade into two portions, and keep half in a refrigerator
Place the chicken pieces in a bowl, pour the the first portion of the sauce over and cover with a plastic wrap. Marinate it in the refrigerator for four hours or over night.
Soak the rice for 1 hour, then wash and per boil to 80% done
Place your cooking butter on a non stick pan, add olive oil to help it dissolve
Add the spring onions, ginger -garlic, carrots and fry for 2 minutes
Add the pre cooked rice, black pepper and salt
Mix thoroughly and stir fry until its done
Place a non stick pan on heat, add 3 spoons of olive oil
Add the chicken and fry until it’s fully cooked and entirely browned up
Once it’s entirety browned, pour in the remaining sauce over and cook for 3 minutes on a high flame
Mix the corn starch with water, and pour into the chicken as you stir thoroughly
Allow the corn starch mix to cook in, for about two minutes till it thickens to your taste
Turn off the heat and garnish with spring onions and sesame seeds
Note: you can also get your teriyaki sauce at the super market, without having made one from scratch. The only difference is making one yourself allows you to have control over the sweet and salty proportion of the sauce to your taste
