Ingredients for Stuffed white radish paratha (Punjabi mooli da paratha) 🧅🧄
- 3-4 medium size white radish grated
- 2 medium size finely chopped onions 🧅
- 1 tbsp ginger garlic paste 🧄
- Salt to taste 🧂
- 1/2 tsp black pepper powder
- 1 tsp cumin seeds
- 1 tsp coriander & cumin powder
- 3 tbsp finely chopped coriander leaves 🌿
- 11/2 tbsp green chillies paste
- 1 tsp level Chaat masala powder
- 1/2 tsp dry mango powder 🥭
- 1/2 tsp red chillies flakes/ red chillies powder 🌶️
- 2-3 finely chopped green chillies
- 2-3 tbsp oil
- Butter, onion salad, plain curd, pickle of your choice
- For dough:
- 1 cup wheat flour 🌾
- 1 tbsp oil/ ghee/ melted butter (unsalted butter)
- Water as required
- Oil/ ghee for cooking parathas
Cooking Instructions for making Stuffed white radish paratha (Punjabi mooli da paratha) 🧅🧄
Wash white radish, pat dry them on kitchen towel, peel and grate them, keep grated radish aside.
Heat oil, add cumin seeds when start to crackle, add finely chopped onions 🧅 cook till little golden, add ginger garlic paste 🧄 mix, cook for a min.
Add grated radish, salt, black pepper powder, green chillies paste mix well, cook, radish will remove some water,after adding salt, just cook until all the water is dried out, add finely chopped coriander leaves 🌿, finely chopped green chillies,red chillies powder/ red chillies flakes 🌶️ mix well.
Finally add Chaat masala, dry mango powder 🥭 mix well, stuffing is ready, let it cool down.
For making parathas: in a large bowl add wheat flour 🌾, oil, ghee, melted butter and mix well, add water 💦 as needed make a soft and pliable, set aside.
Heat griddle, make two equal size lemon balls from the dough and roll them into circles about 5″, take a good amount of the stuffing and place it on one of the circle, cover with other circle, join the edges, dust with dry wheat flour 🌾 roll and make round paratha, care should be taken while rolling the paratha, it can break easy.
Roast the paratha on hot griddle,using oil/ ghee, keep the heat to medium high,make sure that the paratha edges are fried well.you can flip the paratha a couple of times till you see brown spots and the paratha is cooked evenly, the paratha should be golden and crisp from both sides, make all the parathas same way.
Serve Punjabi mooli paratha hot with butter, onion salad, plain yogurt, the pickle of your choice. If desired
