Ingredients for Meatballs in tomato concase
- 500 g minced meat
- 500 g brunoise of onions
- 1 bunch corriander
- I bunch of mint
- Pallet of basil
- 1 tbsp salt
- Itsp pepper
- 1 tsp cumin
- 5 cloves garlic
- 2 tbsp olive oil
- 5 pcs ripe tomatoes
- 2 whole onion brunoise
- Chopped basil
- 2 tbsp tomato paste
- 2 tbsp sugar
- 1 carrot
- I string of leek
- 1 rough cut onion
Cooking Instructions for making Meatballs in tomato concase
For the meat ball :-chop onion,garlic,basil mint basil and corriander
In. A bowl place the minced meat add the chopped fresh herbs and in salt pepper cumin and olive oil
Mix well and measure 30g of meat and make round balls.cover and let them set for 30ms
Boil water,cut through the tomatoes lightly and blunch then for 5 to 10 second until the skin frickles abit
Remove and place in a ice cold water bath remove the skin cut in halves and de seed.chop roughly and set a side
In a clean cooking pot prepare mirepoix add in the tomato paste then the tomatoes let it simmer for 10mns then season with salt and pepper and sugar and fresh basil
Basically sugar is used to balance the acidity found in tomatoes Take the meat balls seal then on a hot pan until golden brown and finish them off in the oven for 15_20mns
Add the ball in the tomato concansee let it in the concanse for 3mns server and garnish with a fresh leaf of basil
