Ingredients for Beetroot & pomegranate salad🥗🌶️🧅
- 2 beetroots cubes
- 1 cup pomegranate seeds
- 1 small size red onion 🧅
- 2 tbsp finely chopped corriander leaves
- 2 tbsp fresh lemon juice 🍋 squeeze
- 1 zest of 🍋 lemon
- 2 green chillies finely chopped
- 2 tbsp sunflower oil 🌻
- Salt to taste 🧂
- 1/2 tbsp black pepper powder
- 1 tbsp finely chopped dill
- 2 tbsp ginger Juliannes
Cooking Instructions for making Beetroot & pomegranate salad🥗🌶️🧅
Unboiled beetroot salad:Peel and cut beetroots into cubes, keep aside. Peel ginger into juliennes, finely chopped red onion 🧅, green chillies chopped, dill & corriander leaves separate, keep aside.
In a bowl add beetroot cubes, red onion 🧅, green chillies, ginger Juliennes, dill, corriander leaves and mix well, add salt🧂& black pepper powder mix well, add lemon juice 🍋, lemon zest, sunflower oil 🌻, mix gently and refrigerate for 30 mins and serve.
Boiled beetroots& pomegranate salad: boil unpeeled beetroots, cover and cook for 40 mins.
They should be tender but not mushy, drain and let the cool, when the beetroots have cooled, peel and cut into cubes, combine with the rest of the ingredients, adjust salt & black pepper powder and refrigerate for 1 hrs and serve.
Tip: total time for boiled beetroots & pomegranate salad may take 55 mins.
