Ingredients for Taro root sabzi 🍅🧅🧄🌶️
- 1 medium size taro root
- 1/4 tsp turmeric powder
- 1/2 tsp kashmiri red chillies powder 🌶️
- 1/4 tsp oil
- Oil for frying
- For curry:
- 2 tbsp oil
- 1 tsp cumin seeds
- 1/2 tsp caraway seeds
- 1 pinch asafoetida
- 1 onion finely chopped 🧅
- 1 slit green chillies
- 1 tbsp ginger- garlic paste 🧄
- 1/4 tsp turmeric powder
- Salt to taste 🧂
- 1 tsp kashmiri red chillies powder 🌶️
- 1/2 tsp cumin powder
- 2 🍅 tomato finely chopped
- 1/2 cup curd
- 1 cup water
- 1/4 tsp garam masala powder
- 2 tbsp chopped corriander leaves
Cooking Instructions for making Taro root sabzi 🍅🧅🧄🌶️
Wash and clean taro roots, pat dry on kitchen towel, peel & cut into big cubes.make marinade, in a small bowl add turmeric powder, kashmiri red chillies powder 🌶️,oil mix, add turmeric mixture on taro roots and mix well, keep aside.
Heat oil, add marinate taro roots and shallow fry them, until golden, remove on paper napkin, keep aside.
For curry: heat oil, add cumin seeds, caraway seeds, stir and add a pinch of asafoetida, add onion fry until golden.
Add ginger- garlic paste 🧄, cook for 1 min, add chopped tomatoes 🍅 mix, add spices, salt to taste 🧂, kashmiri red chillies powder 🌶️, cumin powder,mix it well, add curd cook until oil comes out.
Add fried taro roots cubes, mix well with the masala, add water, cover & cook for 10-15 mins, when gravy becomes thick add roasted dry fenugreek leaves, finally garam masala mix it well, cook for 2 mins and serve hot.
Garnish with chopped corriander leaves.
