Ingredients for Egusi vegetable soup
- 100 g spinach
- 100 g green
- Beef
- Fresh fish
- Periwinkle
- Palm oil
- Curry
- Thyme
- Salt
- Fresh Pepper (blended)
- Fresh Tomato (blended)
- Onion 1½ bulb
- Dry Crayfish (grounded)
- Melon seeds (grounded)
Cooking Instructions for making Egusi vegetable soup
Blend the fresh pepper, tomatoes and a bulb of onion together. With a dry grinder grind the melon with some dry crayfish, then mix it into a paste with some water. And set them aside
Wash the beef and put in a pot. Add salt, curry, thyme and beef seasoning to taste, half bulb onion and water, then steam. For about 10min.
Wash spinach and green to remove particles of sand from it and sit on a shifter.
Wash periwinkle to remove shafts.
Wash the fresh fish and set A-side
Remove the beef from the cooker and sieve the beef from the beef broth (remember to save some of the broth). Put a dry pot on the cooker and when it’s hot add some palm oil allow to heat for about 30sec. Then add the melon paste stir allow to simmer for about a minute add the tomato, pepper sauce and leave to boil for 3-5 min add some salt and Maggie cubes to taste, add the vegetables allow to sit for 2min before adding the beef then the fish.
Then the beef broth and allow to simmer for another. Wala you’ve made an Egusi soup 🍻
