Ingredients for Dan dan noodles
- 500 gram wheat noodles
- Optional pak choy
- Sauce
- 250 gram mince meat pork or beef
- 1 tsp sichuan peppers
- 1 tsp chilli flakes
- 1 Tsp sesame seeds or paste
- 2 aniseed
- 4 cloves garlic
- 2 tsp sugar
- 3 tsp hoisin sauce
- 2 tsp soy sauce
- 2 tsp shaoxing wine (Chinese rice wine)
- 1/4 tsp five spice powder
- Garnish
- 1/2 cup cucumber finely cut into matchstick size
- 1/2 cup chopped toasted peanuts
- 1/2 cup chopped spring onion
Cooking Instructions for making Dan dan noodles
Put the spices except the aniseed of the sauce in a grinder and grind into a paste
On a low fire toast the peanuts if they’re not toasted already in a wok pan. Remove them and set aside. In the same pan heat up some oil add, the spice paste and the aniseed. Add the mince meat.
Once the meat is cooked add the soy and hoisin sauces with the rice wine and sugar. When it’s all mixed and heating up quickly add some pak choy or other veggies
Put on a big pot of water to boil.
Add the noodles and boil, be careful to not overcook. We do not want sticky noodles!
When the noodles are ready, just take them straight from the boiling water into the saucepan. We actually want them to go in with a noodle of starchy water
Serve the noodles in a bowl and add the garnish on top
