Ingredients for Baingan ka Bharta: The Smoky, Roasted Mashed Aubergine You Need to Try
- 1 big sized Aubergine
- 2 tomatoes 🍅
- 3 green chillies
- 3 dry chillies
- 1 tbsp Mustard oil
- 1/2 inch ginger juvenile
- 1/2 tsp Salt
- 1 tbsp Coriander Leaves

Clean and pat dry eggplant 🍆,, make slit from 3 sides. If the eggplant looks clean and without worms, you can proceed further. Optionally, rub a bit of oil all over it. Insert ginger juvenile and green chillies.
Now roast it on the gas oven or in the air fryer. But what I did as when I roasted it in the kadai, its smoked too much so that I had to cover it also.
Tomatoes 🍅 get roasted so early, so I took out and cover eggplant 🍆 again.
In the meantime I crushed all the roasted dried red chillies along with tomatoes 🍅 and keep aside.
Now Baingan or Aubergine 🍆 is roasted well. Wait for few minutes to cool down. Otherwise our fingers get hurt. Now peel off the burnt skin, properly.
Mashed eggplant with tomatoes and chillies. Add salt as required. I like spicy so much that I add 2 more green chillies with chopped coriander leaves 🍃. Add few drops of lemon 🍋 also, that is completely optional.
Mix altogether and enjoy. Here I didn’t use onion garlic. If you want to add, then add chopped onion when you mix up all the ingredients. But garlic should be used when eggplant 🍆 is roasted.
