Ingredients for Yum-yum Beans and Plantain Porridge
- 6 cups beans (preferably honey beans)
- 5-6 pieces plantain
- 2 large onions
- 250 ml meat stock (optional)
- 6-10 pieces fresh pepper
- 3-5 spoonful palm oil
- 3-4 seasoning cubes
- 1 tsp table salt
- 1 handful crayfish (grounded)
- Water
Cooking Instructions for making Yum-yum Beans and Plantain Porridge
Pick the beans carefully and get rid of the dirt. Then, transfer into a clean bowl.
Run the beans under clear water and wash. Repeat this twice before transferring the beans to a clean pot.
Fill the pot, with water, up to half. Cover and bring it to boil.
When the water is boiling, pour in your washed beans. Yes! It speeds up the cooking time.
Allow to parboil on medium to high heat for 25-40 minutes.
By now, you’d notice a colour change to somewhat blackish. This calls for change of water. Drain the beans and wash twice before transferring back to the pot.
Add sliced onions and water enough to cook it until soft. You may as well add your meat stock–optional–and your plantain chunks when the beans is 80% cooked.
If not soft enough as desired, top up your water/liquid content.
In a pan, heat up your palm oil on medium to low heat.
Sauté your chopped onions and fresh pepper for 2-5 minutes. Stir continually to avoid burning.
Proceed to add your seasoning cubes and salt. Adjust to taste.
Mix in your crayfish powder and keep stirring in one direction.
If your beans are fully cooked, bring it down from your stove and transfer it into the sauce.
Mix evenly to ensure the sauce is well distributed.
If too thick, add a bit of water to loosen it up. Then taste for seasoning.
Let it simmer on a low heat for 3-5 minutes.

You just made yourself a pot of yummy-yum beans porridge!
It could be enjoyed alone or paired with dodo, garri soaking or anything at all!!
