Ingredients for Lemon Garlicky Roast Chicken
- 1 whole spatchcocked chicken
- 2 Tbsp olive oil
- 2 Tbsp butter (melted)
- Juice of a whole lemon
- Salt and blackpepper to taste
- Seasoning
- 2 Tbsp Italian herb seasoning
- 2 Tbsp onion powder
- 1 Tbsp garlic powder
- 2 Tbsp fresh lemon zest
- 2 Tbsp minced garlic
Cooking Instructions for making Lemon Garlicky Roast Chicken
Preheat oven with your cast iron in at 180C
Meanwhile, using paper towels, pat-dry the spatchcocked chicken
Using a fork or frother, whisk olive oil and lemon juice until emulsified. Pour frothed mixture on the chicken and carefully rub it all over the chicken, flipping it over to cover all surfaces
Mix all seasoning ingredients. Rub seasoning mix all over the chicken, making sure to insert it in all crevices (including under the skin where possible) for maximum flavor. At this point you can let the chicken marinate overnight if there is sufficient time or just bake right away if on a time crunch
Place chicken (skin side up) in the hot cast iron (be careful with the distance as the chicken will sizzle). Pour the melted butter over it and bake for 1 hour or until golden and crispy
Burst chicken with its juices and let it rest for a few minutes before cutting
