- 1 red apple, cut into matchstick pieces
- 1 green apple, cut into matchstick pieces
- 2 Tbsp lemon juice
- 2 cups matchstick carrots
- 1/4 cup yellow / red onion, finely diced
- 1/3 cup sweetened dried cranberries
- 1/4 cup vanilla yogurt
- 1/4 cup mayonnaise
- 1 Tbsp sugar
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup canned mandarin orange segments, drained

Slice both the red and green apples into matchstick pieces. Place the apple pieces in a bowl, drizzle with lemon juice, and toss to coat evenly. Let the apples sit for about 5 minutes to absorb the lemon juice, which will help prevent browning.
In a large mixing bowl, add the matchstick carrots, diced onion, and dried cranberries.
After the apples have absorbed the lemon juice, add them to the bowl with the carrots, onion, and cranberries.
Add the vanilla yogurt, mayonnaise, sugar, salt, and black pepper to the bowl. Stir all the ingredients together until everything is well coated in the creamy dressing.
Gently fold in the drained mandarin segments, being careful not to break them up too much.
Cover the bowl and refrigerate for at least 3 hours before serving to allow the flavors to meld together.
