Ingredients for Ham and potato casserole
- 2 pounds russet potatoes, peeled and diced small
- 2 1/2 cups diced cooked ham
- 2 tablespoons unsalted butter (¼ stick)
- 1 yellow onion, finely diced
- 2 teaspoons minced garlic
- 3 tablespoons all-purpose flour
- 1 1/4 cups whole milk or half-and-half
- 1/2 cup chicken stock or broth
- 1/2 or so teaspoon seasoning salt depending on how salty you like your food
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 cup sour cream
- 1/4 grated Parmesan
- 4 ounces freshly shredded white cheddar cheese (about 1 cup)
Cooking Instructions for making Ham and potato casserole
Begin with preheating your oven to 400 degrees and greasing a 9×13 baking dish.
Dice your potatoes and ham into 1/2 inch cubes and place them in the baking dish. Set aside
In a medium saucepan pan melt the butter and add the onion, cook until translucent.
Once onion is almost cooked add the garlic and continue to cook until garlic is fragrant.
Add all the seasonings, the flour, and slowly add in the milk and broth. Whisking nicely until well combined.
Next whisk in the sour cream and grated Parmesan (this step is optional) original recipe didn’t call for this but I added them for extra flavour.
Once the sauce has thickened a bit pour it over the potatoes
Cover potatoes with tinfoil and baked for 45 mins
Once the 45 is up take it out of the oven and sprinkle the cheddar cheese, place back in the oven and bake uncovered for another 10-15 mins. And done!
