Ingredients for Crispy Pork Belly Binagoongan
- 1 slab pork belly
- 1 lb egg plant sliced
- 2 tbsp minced garlic
- 1 large red onion finely chopped
- 1 tbsp tomato paste
- 2 large tomatoes chopped
- 1 bottle shrimp paste (any kind)
- 1/2 cup coconut milk (or as needed)
- 6-8 pieces green chillies chopped
- 6-8 pieces red chillies chopped (optional)
Cooking Instructions for making Crispy Pork Belly Binagoongan
Start by air frying your pork belly at least one hour in 300 degrees or until skin is very crispy (depends on your air fryer so monitor it). Take a wok and fry the egg plants to your desired consistency and set aside.
Using same wok, add your garlic and onion and saute for about a minute then add the tomato paste and continue to saute until paste is completely incorporated with the garlic and onion. Add the tomatoes and saute for about 2 minutes.
Add the shrimp paste to the pan and mix it in thoroughly. Add your coconut milk (it’s up to you how much coconut milk you want to use). At this point you may add your chillies and mix it in thorughly. Add back the egg plant and mix.
Take your pork belly out of the air fryer and chop it in bite size pieces. Put it in your binagoongan mixture and mix it in. Transfer to serving plate and share and enjoy.
