Ingredients for 🍪Alfajores Sandwich Cookies🍪
- Cookies
- 100 g (2/3 cup) sugar
- 100 g(7 tblsp) unsalted butter softened
- 2 eggs (3 if they are very small)
- 1 tsp vanilla extract or zest of half a lemon
- 200 g (1 2/3 cup) self-raising flour
- 200 g (1 1/2 cup) cornstarch/cornflour
- Filling
- 400 g (1 1/3 cup) dulce de leche
- Grated coconut as required

Cream the butter with the sugar and the vanilla extract.
Add the eggs one at a time. Once well mixed, add the sifted flour and cornflour/cornstarch.
Mix without kneading.
Wrap in cling film and place in the refrigerator for approximately 30 minutes.
Preheat the oven to medium temperature (175° or 350°F).
Use cling film or lightly flour the work surface and rolling pin.
Roll out the dough to.a thickens of about half a centimeter.
Cut with circular cutter. Suggested between 5 and 6 cm in diameter.
Place on a non-stick baking sheet or baking pepper or greased and floured baking dish.
Gather the dough scrapes together, without kneading, and cut again.
Bake in a pre-heated oven for approximately 10 minutes. The surface should be pale. The base should barely take any colour. Rather than looking at the minutes, be guided by abbreviation. It is very important not to overcook them.
