Ingredients for Chinese Chilli & Garlic stir fried chicken
- 300 gms skinless diced Chicken thighs
- 1 packet Sweet Chilli & ginger stir fry sauce
- 5 garlic cloves peeled and chopped 1 inch piece of root ginger peeled and chopped
- 1 large red onion, peeled and sliced 1 bunch Spring onions roughly chopped into 1 inch pieces
- 1 of each red/yellow bell peppers deseeded and sliced lengthways
- 1 broccoli head cut into florets and blanched in salted boiling water
- 2 carrots peeled, diced and blanched in salted boiling water
- 6 tablespoons groundnut oil
- 2 tablespoons Oyster sauce
- 2 tablespoons Light soy sauce
- 2 tablespoons Rice wine or Dry sherry

Measure and prepare all the ingredients in advance
Put half the oil, half the garlic and half the ginger in a wok. Place on a hot stove burner and once the garlic starts to sizzle add the chicken. After two minutes add half the rice wine, oyster sauce and light soy sauce, keep on a high heat and stir fry the chicken until its white and cooked. Remove from the wok and keep it warm.
Add the remaining oil to the wok and heat until just beginning to smoke. Add the carrots, red onion, peppers. Stir fry for about 4 minutes
Add the remaining garlic and Ginger with the spring onions and continue stir frying for another minute. Add the broccoli, and the remaining soy sauce, rice wine and oyster sauce. Stir fry for a minute.
Return the warm chicken to the wok, add the sweet chill and ginger sauce. Toss all the ingredients together in the wok over the heat for a further 2 minutes to heat the broccoli.
Serve with boiled rice or Egg noodles and enjoy.
