Ingredients for Eggy bread with sweet pepper and tomato
- 2 bread rolls (stale or regular)
- 4 eggs
- 3/4 cup milk
- 1 tbsp sugar
- 1 yellow bell pepper
- 5 cherry tomatoes
- 1/2 tbsp cajun seasoning
- 1 pinch black pepper
- 1 pinch chilli flakes
- 1/4 tsp paprika
- 1/2 tbsp onion powder
- 1 tbsp soy sauce
- Salt (to taste)
- 1/2 tsp Italian seasoning
- Olive oil/avocado oil
- Cheese (to taste)
Cooking Instructions for making Eggy bread with sweet pepper and tomato
Slice the pepper into long pieces and cut the cherry tomatoes into quarters.
Put the peppers in a pan on medium heat with avocado/ olive oil.
Add the sugar, cajun seasoning, chilli flakes, paprika and onion powder.
Add in the soy sauce and tomatoes. Cook until tomatoes have softened slightly and the peppers are cooked. Toss and reduce the heat to very low.
Mix the 4 eggs with black Peper, milk, salt, a pinch of onion powder and Italian seasoning.
Add to the pan on a very low heat and place a lid on for roughly 4 ½ minutes or until the eggs are cooked at the bottom but still runny at the top.
Open the lid and add the bread rolls (sliced in half) and close it back until the eggs have cooked all the way
Add cheese, then close the lid to allow it to melt.
Flip on to a plate, cut and serve.
