Ingredients for Stuffed dates with feta cheese
- 12 dates
- 2 oz Feta cheese, cut into pieces
- 2 cups pecan halves
- 6 tbsp. sugar
- 1 1/2 tsp. cinnamon powder
- 1/2 tsp. salt
- 1/2 tsp. vanilla extract
- 1 1/2 tbsp. water
Cooking Instructions for making Stuffed dates with feta cheese
Preheat oven 440 F/225 C and place a piece of parchment paper on a baking sheet.
Carefully remove the pit from the dates – taking care not to break the date apart.
Place them on the parchment paper and stuff in a piece of Feta cheese in each of the dates, facing up.
Bake for 15 minutes or until cheese has softened and has a nice colour.
While the dates are in the oven, make the candied pecans lining a baking sheet with parchment paper.
Add the sugar, cinnamon, salt, vanilla, and water, to a medium skillet.
Place the skillet over medium heat and cook, stirring often, until the sugar melts into a bubbling sauce, about 1 minute.
Stir in the pecans so that the sugar sauce coats them.
Cook, stirring the entire time, until the pecans look candied and smell nutty, 2 to 3 minutes.
Transfer the candied pecans to the prepared baking sheet and spread them out in one layer..
Allow the pecans to cool down and break them up before placing on top of the baked dates
