Ingredients for Pasta Broccoli with mushrooms
- Spaghetti
- 1 head broccoli
- 5 white button mushrooms(optional)
- Whey(see description)
- Homemade Cheese(see description)
- Water
- 3-4 glarlic pieces
- Cooking oil
- Salt,Pepper
Cooking Instructions for making Pasta Broccoli with mushrooms
First, make homemade cheese and whey. This you do by simmering until quite warm (but not boiling)some FULL CREAM milk in a saucepan on low heat. Turn off heat. Then add a few capfuls of white vinegar. Let sit for about half an hour stirring once in a while. You should see a separation of milk solids and a whitish fluid that is whey. Excellent as a substitute for water in many recipes. You may add salt, I usually do. The milk curds are the cheese and it melts very well in heat.
Then boil some water for your pasta, add some salt and the put chopped mushrooms and broccoli in the boiling water.Let boil for about 6-8 minutes. Remove.Add whey to the boiling waer and let come back to boiling temperature before adding the spaghetti.
In a separate pan, fry the 3-4 garlic pieces, until fragrant.Then add the parboiled broccoli and mushrooms and saute until tender in taste. Add salt and black pepper.
The pasta should be quite tender. Together with its water, add to the tender, seasoned veggies in the pan and turn heat to low, and simmer until pleased with the liquids thickness. Spoon the homemade cheese on top and serve.
