Ingredients for Oiless Vegetable Soup(efo riro)
- Vegetables (spinach, butter leaves, iyanaipaja)
- Onions
- Red bell pepper
- scotch bonnet pepper
- tomatoes
- Ginger
- garlic paste
- Locust beans
- Choice of protein (fish, ponmo, meat etc)
- Salt
- seasonings
Cooking Instructions for making Oiless Vegetable Soup(efo riro)
Prepare all veggies by washing, chop and set aside.
I like to steam my spinach to avoid any of bitter taste(due to chemical or stuff); I place my washed spinach in an empty pot,
Add salt without water, place on heat source and allow it steam for 2-3minutes on low heat.
Bring down and cool immediately with cold water to stop further steaming.
Add your blended/ while locust beans
Stir and allow to continue boiling depending on the amount of water in it, when almost dried,
Add your vegetables, stir gently so that the fish(if using) will not break into pieces or become scrambled. Adjust taste(salt and others).
Oiless Vegetable Soup is ready and can paired with tuwo, white or jollof rice, boiled or roasted yam, can be eaten alone. Enjoy 😋😋
I roughly blend my peppermix, add to a pot and allow it boil without addition of oil.
