Ingredients for Carrot cake 🥕🍰
- For carrot cake
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 7/8 cup granulated sugar
- 3/4 cup lightly packed brown sugar
- 4 large eggs at room temperature
- 3 cups grated peeled carrots
- 1 cup coarsely chopped pecans (optional)
- For cream cheese frosting
- 340 g original soft cheese
- less than 1/4 cup caster sugar
- roughly 1/3 cup softened butter
- A splash of milk (optional) – skip if you like thick frosting
Cooking Instructions for making Carrot cake 🥕🍰
Position the rack in the middle of the oven and pre-heat to 180°C
Grease the cake pan and line with baking paper
Mix all-purpose flour, baking soda, salt and cinnamon in one bowl together until evenly mixed
In a separate bowl, whisk the oil, granulated sugar, and brown sugar
Add the eggs, one at a time, whisk until fully incorporated before adding the next
Add the dry ingredients in three parts, gently stir until the batter is smooth
Stir in the carrots, nuts and raisins
Pour the batter into the prepared pan and bake until the top is springy but when a toothpick inserted into the centre, it comes out clean. Took about 30-40 minutes
Whisk cream cheese, softened butter and sugar together. Add a splash of milk if the mixture is too thick until the desired consistency is achieved
Let the cake cool down completely before adding the cream cheese frosting otherwise it will melt the frosting. Enjoy!
