Ingredients for Pancake Vegetables Sandwish
- 2 cup Pancake Batter
- I Big Onion sliced
- Sweet Grilled Fish (.Debone and mashed)
- Handful Pumpkin leaves, sliced
- 1 Green pepper sliced
- Handful chopped carrots
- 2 Habanero pepper chopped
- 2 garlic gloves chopped
- 2 fresh tomatoes chopped
- cube Salt & spices and seasoning
- 3 tablespoon Vegetable oil
Cooking Instructions for making Pancake Vegetables Sandwish
First, I like to always chopped some onions and a pinch of black pepper onto my pancake batter, it really gives the pancake a different t taste and vibe.
Make your pancakes, and set aside..
Next, pour the oil in a pan, allow to heat up,add the chopped garlic, sliced onions, diced tomatoes and chopped pepper, give it a good shake to mix….allow to simmer briefly…
Next add the sliced green peppers, carrots and pumpkin leaves, add some spices, seasoned cube and salt and lastly pour in the mashed sweet grilled fish.
Let it soak up everything while you stir…the idea is to make the vegetables crunchy, sweet and still fresh.
3.mins is ok..remove from heat..
Plate your already fried Pancakes, dish a generous amount of the vegetables on a pancake, cover with another and do same.
We call this the triple decker Samdwish. Lolz..lastly cover with another pancake.
Cut it up into two equal halves and viola your Pancake Vegetable Sandwish is ready.
The sweetness from the grilled fish makes this veggie filling super yum and really flavourful.
