1 celeriac root

Cooking Instructions for making Roasted Whole Celeriac Root (OMG, thank you Ottholenghi!!!)
Scrub the celeriac root well and remove the hanging long roots. DO NOT cut ends, cut off bumpy spots or peel – leave it as is.
Preheat the oven to 170C, fan
Pierce celeriac with a small knife all over, about 20 times, making sure that you go to the centre of celeriac. This will allow the heat to penetrate all the way through.
Place the celeriac in a baking dish and rub it generously with olive oil. Once fully covered, rub it with a mix of corriander seeds and salt, all over.
Bake uncovered for 2.5 to 3 hours, basting it every 30 min or so. It’s done when celeriac is soft all the way through (you can check with a knife) and golden brown on the outside.
Once done, cut into wedges, drizzle with olive oil and serve with a slices of lemon – squeeze lemon juice on top for an ever better taste..
