Ingredients for Annika’s Tomato Soup
- 12 small – medium tomatos, and a splash of water totala amount of 8 dl. (mixed)
- 2 carrots
- 1 Large Onion
- 1 medium/large Parsnip
- 4 cloves Garlic
- 1/2 dl tomatopuré
- 8 dl water
- 3 dl white wine
- 1 tsp black pepper
- 3 tbsp Oregano
- 1/2 tsp salt
- 1 1/2 tbsp Garlic powder
- 2 1/2 dl Cream (heavy)
- 2 tbsp Honey
- 2 tbsp butter /oil
Cooking Instructions for making Annika’s Tomato Soup
Cut the carrots, onion, Parsnip, Garlic in smaller pieces.
Heat up oil and a splash of butter in a saucepan. Add the vegetables, (not the tomatoes) and let it sweat a bit. after a while add the tomatopuré. Let it become roasted a bit.
Add 8 dl water
Add 3 dl white wine
Let it boil slowly for a while so the vegetables get softer so you later can mix it.
Meanwhile, add tomatoes and a little splash of water in a blender. total amout should be about 8 dl, maybe you can to up to 1 liter. But arround 8 dl.
you can also let the tomato mix direkt with the vegetables and mix all together also, but by using the blender you can measure the amount of tomato easier.
When vegetabiles softer and can be mixed, mix. and than ad the mixed tomatoes.
Add the spices and herbs
Let it small boil for a while.
Add cream (heavy)
Add honey
If its to thick ad some more cream or if you perfer water. too thin, use some cornstarch
In this case i added some leftovers meat i added.. but i just did that so the meat wouldnt go wasted. normaly, no meat in this soup.
Serve with feta cheese on top.
