Preheat oven to 180°c.
Lay salmon on a foil lined baking dish. In a small frying pan over a medium heat add 1/2 the butter & the shallots. Fry for a few minutes until softened. Add the dried parsley and capers and mix through. Fry for a further minute, remove from the heat.

Back to the salmon, pour over the buttery capers/shallots. Season with salt, pepper & a grating of nutmeg. Add a knob of butter to the top each fillet. Bring the sides of the foil up to partially cover the fish and prevent spillages as it cooks.

Bake for around 20-25 minutes until tender and flakey. Serve up fillets and spoon the sauce over that’s in the foil. Enjoy. 🙂
