Ingredients for Fried okra masala 🍅🧅🧄🌶️
- 250 gms fresh okras
- 1 tbsp ginger garlic paste 🧄
- 2 tbsp green chillies paste
- 3-4 finely chopped onions 🧅
- 11/2 finely chopped tomatoes 🍅
- 11/2 tsp paprika powder 🌶️
- 1 tsp coriander cumin powder
- 3 tbsp yogurt
- 3 tbsp sunflower oil 🌻+ oil for shallow frying
- 1/4-1/2 cup gram flour
- 2 tbsp rice flour
- Salt to taste 🧂
- 1/2 tsp turmeric powder
- 1 tbsp dry fenugreek leaves 🌱
- 1/2 ” ginger juliennes
- 2 green chillies chopped
- 2 tsp cumin seeds
- 1/8 tsp asafetida
- 1 tsp sesame seeds
- 3/4 tsp garam masala powder
- 2 tbsp coriander leaves 🌿
- 1/4-1/2 cup water 💦
Cooking Instructions for making Fried okra masala 🍅🧅🧄🌶️
Wash okras and pat dry them on kitchen towel and keep aside, in a bowl 🥣, add gram flour, rice flour, salt 🧂, paprika powder 🌶️, turmeric powder, dry fenugreek leaves 🌱, cumin seeds, asafetida, sesame seeds, garam masala powder & finely chopped coriander leaves 🌿, water 💦 mix well, make semi thick batter, keep aside.
Heat oil in a frying pan, dip one okra at time in the batter and drop in the oil, cook till golden brown, complete all okras the same way, remove on to kitchen napkin, keep aside. Heat oil, add cumin seeds when start to crackle, add finely chopped onions 🧅, cook till pink in colour, add ginger garlic paste 🧄, saute for 1 min.
Add finely chopped tomatoes 🍅, green chillies paste, salt 🧂 and mix well, cook till tomatoes 🍅 are soft, add paprika powder 🌶️, coriander cumin powder, turmeric powder and mix well, cook on low medium heat or until oil comes out, add whisk yogurt, mix well. Cook for 1 min, then add 4 tbsp water mix well.
When start to boil, make a semi thick gravy, arrange fried okras in the serving dish and pour hot sauce on top. Garnish with finely chopped coriander leaves, chopped green chillies, ginger juliennes.
