Ingredients for Eggplants with peanuts and garlic sauce
- A. Veggies 🍆
- 4-6 long / thin eggplants
- 1/2 yellow bell pepper
- 1/2 green bell pepper
- 1/2 red bell pepper
- B. Seasoning Sauce – in a small bowl
- 1 tsp light soy sauce
- 1 tsp sesame oil
- 1-2 tbsp Oyster sauce (or use mushroom sauce for vegetarian)
- Pinch ground white pepper
- C. Other ingredients
- 1-2 bird eyed chillies – finely chopped (optional)
- 4 garlic – crushed & finely chopped

Deep Fried Peanuts
- 1-2 tsp sugar
- Salt to taste

This can be made into a vegetarian dish by substituting oyster sauce with mushroom sauce. See pic below
Cut and chop veggies, garlic and bird eye chillies (if using). See pic below. Mix & combine seasonings in a small bowl. As for peanuts, use store-bought or click on the link below to prepare your own deep-fried peanuts.
Deep Fried Peanuts
Soak cut eggplants in a bowl of salted (1 tbsp salt) water for 15-20mins. This is to remove any bitter taste and eggplants will absorb less oil. Next, drain the water and lightly squeeze to remove excess liquid. Next, to soften them, i usually microwave for 2-3 mins. This helps to quicken the cooking process. Next, Add 1 tbsp of cooking oil to your heated wok. Add the eggplant and cook over HIGH heat until they are soft and cooked. Remove from the wok. Set aside.
In the same wok, add 1 tbsp of oil, sauté garlic until lightly brown. Stir in bell peppers/ capsicums and chopped chilies. Cook over medium heat for a minute or two.
Add eggplant and seasoning sauce (B). Keep stiring. Next, add peanuts, sugar, and pinch of salt. Mix and taste. Adjust seasonings accordingly.
Serve right away with warm rice.
