Ingredients for Vegetables ‘nargis kofta curry’
- 6 boiled eggs 🥚
- 4-5 large potatoes 🥔 boiled & mashed
- 1 diced carrot 🥕
- 3-4 leaves red cabbage (shredded)
- 2 finely chopped onions 🧅
- 1 tsp kashmiri chillies powder 🌶️/ paprika powder
- 1 tsp coriander & cumin powder
- 2 tbsp finely chopped coriander leaves 🌿
- 5-6 finely chopped green chillies
- 1 tbsp finely chopped ginger
- 1 tsp garam masala powder
- 3/4 tsp black pepper powder
- Salt to taste 🧂
- 1 tbsp sunflower oil 🌻/ any vegetable oil
- Oil for shallow frying
- For curry:
- 3 tbsp sunflower oil 🌻
- 3 finely chopped onions 🧅
- 1/4 cup plain yogurt
- 1 tomato puree (homemade) 🍅
- 1 tsp kashmiri chillies powder 🌶️
- 1 tbsp ginger garlic paste 🧄
- 11/2 tbsp green chillies paste
- 1 tsp coriander cumin powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala powder
- 1 bay leaf 🍂
- Salt to taste 🧂
- 1 cup warm water 💦
Cooking Instructions for making Vegetables ‘nargis kofta curry’
Add salt 🧂and water 💦, boil it, add eggs🥚boil them well, till done, add boiled eggs in cold water, peel and keep aside.
In a bowl 🥣, add boiled mashed potatoes 🥔, diced carrot 🥕, shredded red cabbage, finely chopped onions 🧅, finely chopped green chillies, finely chopped ginger, garam masala powder, black pepper powder, coriander cumin powder, finely chopped coriander leaves 🌿, kashmiri chillies powder 🌶️, salt 🧂and oil mix well and keep aside.
Divide the potato mixture 🥔 into six equal parts, put some oil in your palm and take one portion of potato mixture 🥔, pat it to form as chapati, place a hard boiled egg in between and flatten potato mixture 🥔 and cover egg with it, do the same to all remaining eggs and keep aside.
Heat oil, add one egg kofta and fry it, till golden brown, add on paper napkin, use the same method for remaining egg koftas🥚and keep aside.
Heat oil, add bay leaf 🍂 fry for a sec, add finely chopped onions 🧅, cook till golden, add ginger garlic paste 🧄, cook for a min, add tomato puree🍅 cook till comes out from the sides, add kashmiri chillies powder 🌶️, coriander cumin powder, salt🧂, turmeric powder, green chillies paste, garam masala powder and mix well, cook again till oil comes out.
Add whisk yogurt and mix well, cook for 2 mins and add warm water 💦 let it boil, after it starts bubbling, slowly add egg koftas one at a time in the gravy, let it boil for 10 mins and serve hot.
Note: if you desired serve them as fried ‘nargis koftas’ or add them in curry.
