Ingredients for White Mushroom Curry (Vegan)
- 500 g Cooked rice
- 250 g White mushrooms
- 1/2 Red onion
- 4 Cloves garlic
- 2 Chilli peppers
- 1 Tbsp Sunflower oil
- Salt and pepper
- Chives or similar herb
- Sauce
- 200 g Pureed tomatoes
- 2 Tbsp Curry paste
- 1 Tbsp Vinegar
- 1 Tbsp Curry powder
- Salt and pepper
Cooking Instructions for making White Mushroom Curry (Vegan)
Cook some rice. While the rice is cooking, prepare the rest. I suggest simply using a rice cooker!
Finely chop the onion, garlic, and chilli peppers. Cut the mushrooms into quarters.
Prepare the sauce. Simply mix the curry paste, curry powder, salt, pepper, and chopped tomatoes together. Add a tablespoon of vinegar for stronger flavour.
Sauté the chopped onions, garlic, and chillies on medium heat until softened. Season with salt and pepper.
Add the mushrooms and a dash of water. Season with chives or a similar herb. Turn up the heat and mix it all together. Cook until the mushrooms are about halfway done.
Add the sauce and reduce the heat to medium. Mix it all together and stir from time to time.
Keep cooking on medium-low heat for around ten minutes until you get a thicker consistency. If it’s too thick, add some water and keep cooking. You want to cook it for a long time to release all the flavour.
Serve with the rice and garnish with some chives (or similar). Enjoy your meal!
