- 1 tbs light soy sauce
- 1 tbs dark soy sauce
- 1 tbs rock sugar (or 3/4tbs brown sugar)
- 800 ml water
- 2 tbs shaoxing (Chinese) wine
- 1 tsp fish sauce

Cooking Instructions for making Braised Chicken with mushrooms & Tau Kwa

Marinade chicken with seasoning for 1 hour, slice Tau Kwa and boil eggs. Set aside.

Soak mushrooms and slice. Reserve soaking liquid for braising sauce.

Stir Fry ginger, garlic, scallions and Tau Kwa.

When Tau Kwa is slightly browned, remove and add chicken. Lightly fry chicken before adding mushrooms, 400ml water (include mushroom soaking liquid) and the rest of the seasoning sauce and aromatics. Simmer for 30mins.

Add Tau Kwa and Eggs and simmer for another 10mins.
