Ingredients for Potatoes and eggplants #4weekschallenge
- 1 tsp mustard seeds
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tbsp garlic paste
- 1 tsp ginger paste
- 1 chopped corainder
- 1 diced onion
- 1 diced capsicum
- 3 tomatoes chopped
- 1 tsp tumeric powder
- 1 tbsp tomato paste
- to taste Salt
- 1 tsp sugar
- 3 cubed and fried potatoes
- 4 eggplants cut into sizes and fried

Cut your eggplants.sprinkle a little bit of salt and ket it sit for a while.drain the black juice and blot with paper towels then fry them.Cube your potatoes and fry them too
In a pan,add 2 tbsp oil.Add mustard seeds,cumin and coriander powder.let them splutter until a nice aroma is released,then add your onions and capsicum and saute them.
Add your garlic and ginger paste and cook well.Then add your chopped tomatoes.let them cook until soft.Add tomato paste and tumeric powder.cook and mix everything together.Add the tsp of sugar to reduce the acidity of the tomatoes
When everything is well combined,add your fried eggplants and potaoes.Mix everything together.Adjust your salt.You can add a little bit of water if you prefer.Then lastly add in your garam masala.
Adjust your spices and garnish with coriander.When everything is well coated serve with some hot chapatis or ugali.Whatever you prefer.
