Ingredients for Baingan da bharta/ mashed grilled aubergines,ππ§ π πΆοΈ
- 3 large aubergines π
- 1/4 cup oil
- 3-4 sliced onions π§
- 2 finely chopped tomatoes π
- 2 tbsp finely chopped coriander leaves πΏ
- Salt to taste π§
- 1 tsp kashmiri red chillies powder πΆοΈ
- 1 tsp coriander & cumin powder
- 1 tbsp ginger-garlic paste π§
- 2 tbsp green chillies paste
- 2 tbsp fresh green peas/ 2 small size chopped green capsicum π«
- 1 tbsp ghee
- 1 tbsp ginger Juliannes & 2 green chillies finely chopped
- 1 tsp cumin seeds
- 1-1/2 tsp turmeric powder
- 1/2 tsp garam masala powder

Roast the aubergines π and remove itβs skin and mash it, keep aside.
Roasting aubergines for βbaingan da bhartaβ
Heat oil, add cumin seeds when start to crackle, add sliced onions π§ , cook till golden, add ginger-garlic paste π§ mix well, add finely chopped tomatoes π , salt π§ mix well.
Add kashmiri red chillies powder πΆοΈ, coriander & cumin powder, turmeric powder, green chillies paste, lf using green peas and mix well, cook until oil comes and add mashed aubergines π mix well.
Cook mashed aubergines till oil comes out from the side of the pan and finally add garam masala powder and mix well, add green capsicum π«,cook for 3 mins and serve hot, with naan. Garnish with finely chopped coriander leaves πΏ, ginger Juliannes, ghee, finely chopped green chillies.
Note: if using green peas, omit green capsicum π« and use 1 ingredient of your choice at one time.
