Ingredients for Baingan da bharta/ mashed grilled aubergines,

3 large aubergines
- 1/4 cup oil
-
3-4 sliced onions
-
2 finely chopped tomatoes
-
2 tbsp finely chopped coriander leaves
-
Salt to taste

1 tsp kashmiri red chillies powder
- 1 tsp coriander & cumin powder
-
1 tbsp ginger-garlic paste
- 2 tbsp green chillies paste
-
2 tbsp fresh green peas/ 2 small size chopped green capsicum
- 1 tbsp ghee
- 1 tbsp ginger Juliannes & 2 green chillies finely chopped
- 1 tsp cumin seeds
- 1-1/2 tsp turmeric powder
- 1/2 tsp garam masala powder
Cooking Instructions for making Baingan da bharta/ mashed grilled aubergines,



Roast the aubergines and remove itβs skin and mash it, keep aside.
Roasting aubergines for βbaingan da bhartaβ
Heat oil, add cumin seeds when start to crackle, add sliced onions , cook till golden, add ginger-garlic paste
mix well, add finely chopped tomatoes
, salt
mix well.
Add kashmiri red chillies powder , coriander & cumin powder, turmeric powder, green chillies paste, lf using green peas and mix well, cook until oil comes and add mashed aubergines
mix well.
Cook mashed aubergines till oil comes out from the side of the pan and finally add garam masala powder and mix well, add green capsicum ,cook for 3 mins and serve hot, with naan. Garnish with finely chopped coriander leaves
, ginger Juliannes, ghee, finely chopped green chillies.
Note: if using green peas, omit green capsicum and use 1 ingredient of your choice at one time.
