Ingredients for Brad’s hot honey catfish and biscuits
- For the fish
- 8 portions catfish filets. 5-6 oz each
- 2 cups flour, divided
- 1 cup yellow corn meal
- 3 eggs, beaten
- Salt, pepper, onion & garlic powder, smoked paprika
- For the hot honey
- 3/4 cup honey
- 2 tbs butter
- 2 tbs Sriracha sauce
- 1 tsp Louisiana hot sauce
- 1/2 tsp cayenne pepper
- 2 cloves garlic, minced
- For the avocado ranch slaw
- 2 cups coleslaw mix
- 1/4 cup grated onion
- 1/4 cup avocado ranch dressing
- 2 tbs coleslaw dressing
- Wedge of lemon
- Other ingredients
- 8 fresh baked buttermilk biscuits
- Sliced cheese. I used mixed cheddar and ghost pepper jack
- Sliced dill pickles
- Oil for frying
Cooking Instructions for making Brad’s hot honey catfish and biscuits
Preheat oven to 350 degrees. Rinse and pat dry the catfish filets. Portion into 5 to 6 oz portions. Lightly sprinkle the seasonings listed on the fish and set aside.
Mix all of the slaw ingredients except for the lemon in a medium mixing bowl. Refrigerate until needed to serve. Just before serving, squeeze one to two wedges of lemon over the slaw and quickly toss.
Bake your biscuits as required. As soon as they go in, place a 12 inch frying pan on a med heat burner. Fill with preferred frying oil to 1/2 inch deep. Heat oil while preparing the breading and honey.
Add all of the honey ingredients into a small pot. Place on low on a back burner and slowly bring sauce to a gentle simmer. Stir often.
Prepare the breading. I prefer the 3 step process… I usually do this in gallon ziplock bags to save the giant mess. In the first bag I add 1 cup of flour. I lightly salt and pepper the flour. Seal and shake to mix. In the 2nd bag I add 3 beaten eggs. In the 3rd bag I add 1 cup flour, 1 cup yellow cornmeal. And 1/2 tbs each of the seasoning listed. Seal and shake to mix well.
When the oil is ready it will be about 360 degrees. Fry fish in 2 batches of 4 pieces each. First place fish in the bag of flour. Seal and shake well. Next place in the bag of beaten egg. Seal and shake well. Then place in the bag of corn meal mix. Seal and shake well. Gently lay coated fish into hot oil. Fry 3 to 4 minutes. Flip and fry 2 to 3 minutes until golden brown. Remove to a paper towel to drain. Repeat with the second batch.
Assemble sandwiches, i put one slice of each cheese on the sandwich. Fish, coleslaw, with hot honey drizzled over the fish. Serve immediately with preferred sides. Enjoy.
