Ingredients for Breadcrumbs-stuffed artichokes
- 6 medium size artichokes
- 1 cup non-flavoured bread crumbs (panko works)
- 5 cloves garlic
- 1 small bunch parsley
- Extra-virgin olive oil
- Salt
Cooking Instructions for making Breadcrumbs-stuffed artichokes
First you need to clean the artichokes. Before starting prepare a bowl of cold water and squeeze half a lemon in it. You’ll place your cleaned artichokes in the bath to prevent them from oxidizing and turning black.
Cut off the artichokes stems and peel off the outside, stringy layer, until only the lighter coloured inside is left.
Remove outside leaves of the artichoke (6 to 8 leaves each usually). As you clean, place stems and artichokes in the lemony water.
Prepare the artichoke stuffing. Finely chop the garlic, parsley and the artichoke stems.
In a bowl, mix everything you chopped with the breadcrumbs, then add a pinch of salt and 2 table spoons of olive oil.
Remove the artichokes from the bath and place them standing up in a pot. Choose the right size pot so that the artichokes can be snug and won’t tip over while cooking.
Open up the artichokes and stuff them with the breadcrumb mixture you prepared.
Drizzle with olive oil and salt, then add just enough water to cover the bottom of the pot.
Cover the pot and let the artichokes steam at low heat for 20-30min.
