Ingredients for Broccoli stir fry & tomato rice

1 small fresh broccoli florets
- 2 1/2 cups
- 1/2 tsp cumin seeds

1 tbsp finely chopped garlic
-
1/2 tsp kashmiri red chillies powder
-
2-3 ringed onions
- 2 finely chopped green chillies
-
2 potatoes cut into small cubes
- 2 tbsp toasted white sesame seeds
- 5 tbsp oil
- 1/4 tsp coriander & cumin powder
- 1/2 tsp sugar

1 tbsp lemon juice
-
Salt to taste
- For tomato rice :
-
1 cup basmati rice
- 2-3 tbsp oil
-
11/4 medium size onion
-
1 tbsp ginger garlic paste
- 1-2 finely chopped green chillies
-
2 finely chopped tomatoes
-
Salt to taste
- 1/2 tsp curry powder/ garam masala powder
-
1 tsp paprika powder
/ kashmiri red chillies powder
-
2 tbsp finely chopped coriander leaves
-
1 tbsp lemon juice
- 12 cashew nuts, almonds β optional + 2 tbsp ghee
-
1 bay leaf
- 1 tsp cumin seeds
- 1 cinnamon stick
- 3-4 green cardamoms
- 2 cloves
Cooking Instructions for making Broccoli stir fry & tomato rice 


Wash and clean broccoli florets , keep aside.
Heat 2 tbsp, add potatoes cubes fry them till golden, remove and keep aside. Add 3 tbsp oil, add cumin seeds when start to crackle,add finely chopped garlic
cook till golden, add broccoli florets
, stir fry for 1 min, add kashmiri red chillies powder
, coriander cumin powder, sugar and mix well.
Add salt mix well, remove from heat, let it cool down completely, then add ringed onions
, finely chopped green chillies, fried potatoes
and lemon juice
mix gently and serve with tomato rice
, garnish with toasted white sesame seeds, some few tomato cubes

Wash basmati rice for 3 times, soak for 15 mins. Boil 2 cups of water, add 1/2 tsp salt
, add soaked rice, let it boil, when 70% done, remove the rice
from the heat, let it cool completely/ lay them on a baking tray, spread the rice with folk, let it cool completely.
In a small frying pan add ghee, fry cashew nuts/ almonds till golden, remove and keep aside.
Heat oil and add bay leaf , cumin seeds, cinnamon stick, green cardamoms, cloves when starts to crackle, add finely chopped onions
, cook till golden, add ginger garlic paste
, cook for 1 min, add finely chopped tomatoes
, cook till tomatoes are soft and oil comes out.
Add spices ( paprika powder / kashmiri red chillies powder
, curry powder/ garam masala powder, 1 tbsp finely chopped coriander leaves
and mix well. Cook for 2 mins and finally add cooled boiled
rice, mix gently, cover and cook for 5-10 mins, check if rice is tender. Garnish with finely chopped coriander leaves
, few tomato cubes
, serve hot with broccoli stir fry and enjoy
