Ingredients for Brown lentil veggies salad
- 1/2 cup whole brown lentil/it is also called red lentil– soaked overnight or for 8 hrs

1/2 cup water

1/2 deseeded cucumber
cut into cubes

1 grated carrot
- 1 deseeded tomato cut into cubes

1 tbsp finely chopped fennel leaves
- 1 tbsp oil
- 1/2 tsp cumin seeds
-
Salt to taste
- 1/4 cup red cabbage shredded
-
1 green capsicum
cut into cubes

2 small size onion slices
- For Dressing:
-
1 tbsp freshly squeezed lemon juice
- 1-2 finely chopped green chillies
- 1/4 tsp freshly ground black pepper
- 1/2 tbsp olive oil
Cooking Instructions for making Brown lentil veggies salad 
Clean,wash and soak whole brown lentil for overnight or 8 hrs,in a deep pan add 1/2 cup water, soaked whole brown lentil, cover and boil for 8 mins or till all the water has been evaporated, remove from the heat, keep aside, let it cool completely. Heat oil, add cumin seeds when start to crackle, add boiled whole brown lentil, saute for 3-4 mins, remove from the heat, let it cool down completely.
Once it’s cooled, transfer the sauted whole brown lentil into deep bowl , add all the ingredients (cucumber cubed
, grated
carrot, tomato cubed
, finely chopped fennel leaves
, shredded red cabbage, onion slices
, green capsicum
) and mix well, keep aside.
For dressing: in a small bowl , add olive oil, lemon juice
, finely chopped green chillies, freshly ground black pepper & salt to taste
mix well, pour the prepared dressing over the salad
and mix gently, serve immediately.
Note: if you don’t want to saute the lentil, then I kindly recommended that you should use boiled whole lentil straight a way.
