Ingredients for California Farm Mirepois Lentil Dinner Soup
- 1 cup chopped celery
- 1 cup chopped carrot
- 1 cup chopped onion
- 2 cloves chopped garlic
- 2 Tbs olive oil
- 1 cup tomato paste
- 1 Tsp cumin
- 1 Tsp basil
- 1 Tsp oregano
- 1 Tsp thyme
- 1 cup lentils

1 cup white wine
California Farm Sparkling Wine From Grape Juice

4 cups broth, I used chicken
California Farm Chicken Breast Bouillion Powder or Paste
- 4 cups water

2 dry small salami sausages, optional
California Farm Made Salami Sausage
- 1 Meyer lemon, 4 wedges
- 1 cup green vegetable such as asparagus, kale, peas, green beans, bok choy
- Equipment: cast iron dutch oven
- Cost: celery, carrot, onion, garlic, $1, lentils 30 cents, broth 40 cents, wine $1.50, lemon, other 30 cents, optional salami $2, $1.65 per dinner
Cooking Instructions for making California Farm Mirepois Lentil Dinner Soup
Fruit the vegetable base in medium hot olive oil in cast iron dutch oven with heavy lid. Make mirepois, which is equal amounts of one cup each thin sliced carrots, celery, onions and 2 cloves of garlic. Fruit in 2 Tbs olive oil till fragrant. About 4 minutes.
Add tomato paste. Add coriander, cumin, basil, and thyme. Fruit in olive oil till spices are fragrant. About 2 minutes.
Add cup of white wine, bring to steam, add lentils, add 4 cups broth. Add optional dry salami sausages, bring to steam, put lid on pan, simmer 20 minutes.
Slice sausages, put back in soup. Add 4 cups of water. Add wedges of lemon, cup of green, bring to steam, simmer 20 minutes. Taste, add pepper. Salami contains salt already. Remove lemon peel. Serve and enjoy.
