- 1 (400 g) tin cannellini beans drained,
- 100 g peeled & grated carrot,
- 2 spring onions, chopped finely,
- 1 large egg,
- 50 g plain flour,
- 1 tsp smoked paprika,
- 1 tsp dried oregano,
- 1 tsp garlic paste,
- Salt & pepper to season,
- 2 tbsp cooking oil for frying
- To garnish:
- 30 g reduced fat crumbled feta cheese,
- Red chilli flakes (optional),
- Sliced spring onion greens
- For the dipping sauce:
- 2 tbsp lighter crème fraiche,
- 1 tbsp lemon juice,
- 1/2 tsp garlic paste,
- 1 pinch salt
Cooking Instructions for making Cannellini Bean & Carrot fritters with
Crumbled feta
Mix together the ingredients for the dip and then put in the fridge for later. Heat the oil up over a medium low heat in a non stick frying pan or skillet.
In a bowl add the cannellini beans, dried oregano, salt, pepper, smoked paprika, spring onions & garlic paste. Mix together well. Using a potato masher, mash the seasoned beans until broken down and no full beans remain.
Add in the egg. Grate the carrot and using kitchen towel squeeze out any excess liquid. This will prevent the fritters becoming too wet. Add in the carrot plus the flour. Give everything a good stir. Set in the fridge for 10 mins to firm up.
Take heaped tbsp of the batter & place in the hot oil 3 at a time, pushing them out into a flat round shape using the back of the spoon, fry for 2-3 mins each side until cooked through and golden brown.
Serve up with the chilled dip and crumble the feta cheese over the top. Garnish with spring onion greens. Enjoy! 🙂
