Ingredients for Cauliflower in Yogurt Sauce
- Cauliflower
- Yogurt or Mayonnaise
- Ground coriander
- Salt
- Chilli flakes
- Fresh parsley
- Fresh coriander
- Garlic
- Green chilli
Cooking Instructions for making Cauliflower in Yogurt Sauce
Cut cauliflower in small pieces and add them in boiling water for 10 minutes maximum.
Prepare cold icy water and put the boiled cauliflower inside it. It will stop cooking cauliflower internally and it will remain crunchy.
While its getting cold, start preparing sauce. Mix yogurt or mayonnaise with water, until you get consistency like in video. You should prepare the amount to cover your cauliflowers halfway.
Add salt, chilli flakes, ground coriander to your taste. It should be a bit chilli.
Add finely cut parsley, coriander, small amount of green chilli and garlic clove. Mix 90% of it with the sauce. We will sprinkle the rest on top of the finished dish. Sauce should be a bit garlicky.
Now, lets start frying the cold cauliflower. Fry it on medium heat with olive oil until golden brown.
Let it cool for 5 minutes on a plate and after that slowly put the fried cauliflower in the sauce. Gently pour the sauce by spoon to each cauliflower. Sprinkle remaining greens and garlic on top and enjoy!
