Ingredients for Celery & red beans salad

1/4 cup red kidney beans
soaked and boiled

3/4 tsp paprika powder

2 medium size onions
cut into rings

3 tbsp fresh celery finely chopped

2 tbsp fresh dill finely chopped

1 medium size carrot
grated or ribbons

1/2 cucumber
diced in small cubes -(seeds removed)
- 1 yellow scotch chilli or 2 finely chopped green chillies (remove seeds from both chillies)

1 tsp finely chopped garlic
- 2 tbsp oil for saute

Salt to taste
- For dressing:
- 3 tbsp extra virgin olive oil

1/2 lemon freshly
squeezed
- 1/2 tsp black pepper powder
Cooking Instructions for making Celery & red beans salad 
Wash and clean the red kidney beans and soak them for 7 hrs, boil them till tender, remove from heat and keep aside. Note: {the boiling time will be under 1 hr and depending of the hardness of the beans}. In a pan add oil, when heat add finely chopped garlic , cook till light brown and add boiled red kidney beans
and saute for 5 mins, add salt
and paprika powder
and mix well, remove from the oven and let them cool completely.
In large bowl, add sauted red kidney beans , onion rings
, fresh chopped celery & dill
, finely chopped scotch chilli or green chillies, cucumber
diced, carrot
ribbons/ grated mix all together gently and keep aside till serving time.
For dressing: in a small bowl add extra virgin olive oil, lemon juice and black pepper powder mix together and pour on the salad, mix gently and serve immediately with plain rice, toasted bread slices and etc.
