Ingredients for Chicken Fajitas
- Chicken breasts – 500g, sliced into thin strips
- Bell peppers – 2 (red and green), sliced
- Onion – 1 medium, sliced
- 2 tablespoons Olive oil –
- Garlic – 2 cloves, minced
- Fajita seasoning – 2 tablespoons (or use a mix of chili powder, cumin, paprika, salt, and pepper)
- Lime – 1, juiced
- Salt – to taste
- Black pepper – to taste
- Flour tortillas – 8 small
- Toppings (optional): sour cream, guacamole, salsa, shredded cheese, cilantro
Cooking Instructions for making Chicken Fajitas
Prepare the chicken: In a bowl, toss the chicken strips with fajita seasoning, lime juice, salt, and black pepper. Set it aside to marinate for about 10-15 minutes.
Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet or frying pan over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set it aside.
Sauté the vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and bell peppers. Sauté for 4-5 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.
Combine: Return the cooked chicken to the skillet with the vegetables and stir everything together. Let it cook for another 1-2 minutes to combine the flavors.
Warm the tortillas: While the chicken and veggies are cooking, warm the flour tortillas in a dry skillet or microwave for a few seconds until soft and pliable.
Serve: Spoon the chicken and vegetable mixture into the warm tortillas. Add your favorite toppings like sour cream, guacamole, salsa, shredded cheese, or cilantro.
