Ingredients for Chicken, Mushroom & Spinach Pasta
- 240 g penne pasta,
- 1 tbsp vegetable oil,
- 1 chicken breast, diced very finely, (use cooked or raw),
- 6 mushrooms, diced very finely,
- 2 cloves garlic, chopped,
- 2 cubes frozen spinach,
- 2 handfuls frozen petit pois peas,
- 1 tsp dried oregano,
- Pepper & salt to season, plus extra salt for pasta water,
- 2 tbsp garlic & herb cream cheese,
- 1/2 lemon (juice only)
Cooking Instructions for making Chicken, Mushroom & Spinach Pasta
Add salt to boiling water in a large saucepan & add the penne. Whilst the pasta cooks add the oil to a large high sided frying pan over a medium heat.
Once the oil is hot add the diced chicken and fry on all sides until opaque. Next add in the mushrooms. Cook for a further 2 mins. Add the garlic. Stir fry for 20 seconds. Season with salt, pepper and add the oregano. Turn down the heat to low.
Add the frozen spinach and peas in with the pasta and continue to boil it until done. Drain it off reserving some of the pasta water. Pour the pasta, spinach & peas into the frying pan and give everything a good stir together.
Remove from the heat. Add a squeeze of lemon, stir then add the cream cheese. Combine it through the pasta to coat. Season with more salt & pepper to taste then serve up, enjoy! 🙂
