Ingredients for Chicken sausage vegetable tray bake with red pesto
- 1 broccoli
- 2 red onion
- 2 courgettes
- 150 g small button mushrooms
- 250 g new potatoes
- 295 g sundried tomatoes
- 2 bell peppers
- 190 g red pesto
- 340 g chicken sausage
- Virgin olive oil
- Half a teaspoon of salt
- Half a teaspoon pepper
- 1 Teaspoon chicken seasoning
- 1 teaspoon paprika
Cooking Instructions for making Chicken sausage vegetable tray bake with red pesto
First, cut all of your vegetables into chunks and your new potatoes into halves.
Season your new potatoes with a teaspoon of virgin oil, salt, pepper, paprika, and chicken seasoning. And mix it all together until all the potatoes are covered.
Cover the vegetables in olive oil and the same seasonings and mix all together in the tray
Cut up your sausages into chunks and place them in the veggie tray. Then, place in the oven for 40 minutes on 190c fan oven.
In the last 20 minutes of cooking, put your new potatoes in the oven, or you can put them in the air fryer like i did for 20 minutes on 190c
In the last 10 minutes of cooking, add your sun-dried tomatoes into the veggie tray.
Once they are all cooked, transfer the veggies into a separate bowl, discarding any liquid left behind.
Then add your red pesto and mix it till the veggies and sausages are all covered
Now you can plate up your dish and even add a little cheese on top or pumpkin seeds for extra crunch.
