Ingredients for Chow mein
- 1/2 pkt Shogun Chow mein noodles
- 1 capsicum julienne
- 1/2 cup cabbage julienne
- 1/4 cup onion julienne
- 1 tsp chopped garlic
- 1 1/2 tsp ginger chopped
- 2 tbsp chopped spring onions to garnish
- 1 tsp oil to add while boiling noodles
- 2 tbsp oil
- 1 tbsp tomato ketchup
- 1 tsp hot chilli sauce
- 1 tsp soya sauce
- 1/4 tsp blackpepper powder
- 1/4-1/2 tsp salt
Cooking Instructions for making Chow mein
Boil 500ml water in a pot. Add noodles in the boiling water followed by 1 tsp oil and some salt. The noodles should get cooked in 5 min. They are perfectly cooked when they break upon pulling. Do not under-cook them or else they’ll get chewey. Over-cooked noodles will get starchy.
Sieve noodles to drain out water. Run tap water over it in order to stop further cooking process. Continue until the noodles feel at room temperature. Keep them aside.
Heat up a wide kadhai on high. flame. Add ginger garlic and then pour oil over the surface of the kadhai all around creating the smoke in the kadhai. Fry onion, capsicum, cabbage in this order for a minute each. Add salt and the sauces. Combine well.
Now add noodles, black pepper and salt. Lightly combine everything. Cook till the moisture urns out and the noodles shine will oil. Serve.
Note: 1. The noodles must be boiled perfectly. 2. At the time of stir fry if you take little oul, the noodles will feel dry and clinched up.
