Ingredients for Courgetti and Meatballs
- Meatballs
- 500 g pork sausage meat (preferably organic and free range)
- 1 tsp dried sage
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Red Sauce
- Olive oil for cooking
- 1 red or yellow onion, diced
- 2 cloves garlic, minced
- 1 tin chopped or plum tomatoes
- 1/2 cup water or stock
- 1-2 tsp soy sauce
- 1 tsp dried oregano
- 1/2-1 tsp red pepper flakes
- Courgetti
- 3 courgettes, spiralised or cut into noodle shapes
- Garnish
- Parmesan, nutritional yeast or cheese alternative
Cooking Instructions for making Courgetti and Meatballs
Preheat oven to 200 C. Prepare meatballs by adding sausage meat and spices together in a bowl, mixing with your hands until combined. Don’t over mix as you’ll get tough meatballs!
Line a baking sheet with parchment paper. Roll meat mix into small balls, about 1 inch in diameter, and place on a baking sheet. I made 16 from this mix. Bake in the oven for about 15 minutes (or you can also pan fry them but baking them is quicker).
While the meatballs are cooking in the oven, make your sauce. Add olive oil (about 1 tbsp) to a frying or sauce pan over medium heat, add red onion and cook until it softens. Add minced garlic and stir until fragrant and browning slightly. Turn down the heat if necessary so it doesn’t burn.
Add the tin of tomatoes and water or stock (I added water straight to the tin to get all the extra tomato bits) and raise the heat if necessary so that the sauce simmers. Keep stirring and let it reduce for about 10 minutes (watch that it doesn’t burn).
Add soy sauce, oregano and chili flakes and keep cooking. Taste and season to your preference.
When meatballs are done, remove from oven (I usually cut one in half to check for doneness). Optional: add meatballs juices from the baking tray to your red sauce for bonus flavour!
While the sauce is cooking, spiralise your courgette to turn them into noodles (or simply cut them into long strips). Add them straight to the sauce and cook for 3-5 minutes until they have softened to your preference.
Serve immediately, top with meatballs and Parmesan or your desired cheese alternative.
