Ingredients for Crunchy Asian Veggies Salad
- 🥒🥕🍏🌱🥭🍅 Veggies – SEE PIC
- 1 C finely shredded green papaya
- 1/2 C shredded green mango (small)
- 1/3 C finely shredded carrot
- 2 snake beans – cut into short batons
- 6 cherry tomatoes – halved
- 🔪🥣🍋🧂🥄 Salad Dressing
- 3 chillies (adjust to your taste)
- 1 tbsp sugar/soft light brown sugar/palm sugar
- 1 tbsp fish sauce (see pic)
- 1-2 tbsp lime juice (1 – 2 limes)
- 3 tbsp peanuts (see pic below)
- Salt – to taste (optional)
- To Garnish
- Chopped coriander
- Or mints

VEGGIES 🔪
👉🏻 Preps & measure all ingredients. See pic below. Keep aside.
👉🏻 Lightly bruise or crush all veggies using mortar and pestle. (bruising or crushing veggies is totally optional)
NOTE:
Cucumber can be a good substitute for green papaya and green apple is used to replace green mango. Add other crunchy veggies like carrot & cabbage. Throw in some green/snake beans, small/cherry tomatoes for the colour.
Adding finely minced garlic is optional.
Salad Dressing 🥄🥣
👉🏻 crush chopped chillies using mortar and pestle. Add sugar, lime juice and fish sauce. Mix well. Pour this mixture to your shredded veggies.
Crush peanuts using mortar and pestle. Add finely crushed peanuts to your veggies.
Toss the dressing and the salad making sure everything is well-combined and seasoned.
Serve immediately with white rice & fried or BBQ-ed fish/meat/chicken.
To jazz up this basic recipe, you can add:
👉🏻 dried shrimps – softened & pounded
👉🏻Shredded chicken
👉🏻 Blanched seafood like octopus, squids, prawns, shells, crabs
👉🏻 chicken feet
👉🏻 thinly sliced meat
Note that, Shredded veggies can be prepared in advance minus the dressing.
