Ingredients for Cucumber & tomato sandwich, a banana and peas salad
- 4 slices brown bread
- slices Margarine for the bread
- 1 cucumber
- 1 medium tomato
- 4 tbsp pre-boiled peas(minji)
- 1 medium carrot
- 2 medium garlic pieces
- 1/2 white onion
- 1/2 a medium avocado
- 1 piece lemon
- 1/2 a beef royco cube
- Salt for taste
- 1 tbsp cooking oil

Chop the tomatoes and half a cucumber into round piece. Salt one side. Heat the pan, roast them on one side in low heat.
Apply margarine on both sides of each slices of bread. Put the cucumber and tomatoes between two bread slices and place on the sandwich maker. Do the same for the other 2 slices of bread. Turn on the sandwich maker.
Grate garlic and carrots together and mix them in a bowl with pre-boiled peas. Cut the onion in medium to small pieces.
Add oil to the pan on the fire and put the onions. Once translucent, add your royco beef cube and cook them for one minute. Add the peas mixture to the pan and fry in low heat.
Cut half an avocado, sprinkle some lemon juice and mash with a folk(the idea is to still have the avocado in chunks). Scoop the peas mixture and mix with the avocado. Serve on one plate and do the same for the other plate.
Cut round slices of banana on each plate. And voila! We are done.
